Salmon Dish in Alsace

Hi Suzele,

It's been many years since I've been to Alsace, but a few foods still make my mouth water, and I'm hoping you can help identify one for me.

The dish is served as a platter of very thinly sliced smoked salmon
that is then topped with a mild oil. The dish is so thin that it must be scraped from the platter with a fork, and tends to be served as multiple trays, replaced as you finish each one.

Salmon Carpaccio

Hi Rob,

The only very thinly sliced salmon dish that I am aware of is Salmon Carpaccio which I have seen and eaten here in Europe.

But I don't think it qualifies as an Alsatian dish...

Of course keep in mind that there are quite a few gastronomic restaurants in Alsace that serve very inventive cuisine that is not always typical of Alsace.

Of course they always have some dishes inspired by Alsace, but not the entire menu.
