How do I search for ancesters?

My ancestors lived in Bitsch, Frankreich, which is now France. With all the changes in the Alsace area and the changing from Germany to France how does one find information? My family name is Sander and they left for Russia about 1766.

The records are in the region regardless of its nationality. So when Alsace was German, the records were here, but in German.

And when Alsace was French (and still is), the records were and are still located in Alsace and were written in French (or Latin in church records).

1766 is a difficult time because records were not required by the state, so only church records exist.
